Title: Hotel Cost

Controller
 

Salary: 80k – 90k

Our client is a Private Members Club that is sports oriented and is based in

Nairobi. 

They

seek to recruit a highly competent and proactive Cost Controller to be

in-charge of the hotel’s cost and assets. 

Duties

and Responsibilities

• Prepare
  
  the costing for recipes and menus prepared by the Executive Chef and
  
  suggest the selling price


• Perform
  
  test checking on the receiving of goods at the hotel to ensure that the
  
  procedures are followed correctly


• Assist
  
  and support all cost information for the Chief Accountant to develop the
  
  management report


• Lead
  
  the team performance to achieve the department’s goals and Club’s
  
  philosophy


• Prepare
  
  daily flash report of food costs and verify daily outlet void control
  
  sheets


• Attend
  
  major banquet events with open bar, prepare P&L statement of major
  
  banqueting events and prepare banquet revenue breakdown summaries


• Randomly
  
  test the inventory of outlets by reconciling the opening stock with the
  
  closing stock, taking account of store issues and sales


• Verify
  
  and control complimentary bar order forms, Food & Beverage cost, fruit
  
  baskets in the rooms.


• Plan
  
  and manage all hotel cost concern


• Organize
  
  the cost controlling system


• Organize
  
  the asset controlling system


• Organize
  
  the store and receiving system



• Manage
  
  F&B cost function


• Track
  
  record of all cost issues


• Maintain
  
  standard of all responsible areas


• Coordinate
  
  with all departments for inventory


• Develop
  
  cost report for Chief Accountant


• Support
  
  cost information for all concern departments upon request

• Degree
  
  in hotel management or accounting


• 2
  
  to 3 years experience as a cost controller in a hotel or resort


• Must
  
  have a sound knowledge of F&B cost controlling and computer literacy


• Knowledge
  
  of QuickBooks, POS Systems and SUN System is an added advantage


• Excellent
  
  verbal and written English communication skills
