knowledge Stores, Kitchen ,Restaurant and Bar operations
will make sure quotation from suppliers are obtained in the proper manner
use current market trends and menu costing programmes to price menus and food cost percentage
ensure over production is detected
ensure spot –checks in all stores and any selling outlet is done and produce a report of the findings to the accountant and copied to the General Manager
ensure accurate bar stocks is properly taken and the beverage together with food cost reports are handed to the accountant copied to the General manager at the required timings
ensure shortages are recovered from all outlets
ensure all captain orders recorded in the departmental summaries tallies with what has been handed over to the front office cashier
computer Literate self motivated, innovative and one who can work under pressure meeting deadlines be independent and makes sure the controls measures are adhered to
Must be between 30 to 40 years 3) Academic and professional qualification Must have a c+ and above
Diploma and above in F&B Controls training from a reputable institution preferable
Must have 10 years work experience in a busy Hotel with at least 4 years as a F & B Controller
