Executive Chef – Dar Es Salaam,Tanzania
Our client, a fast-growing Restaurant Company, is looking for a Head Chef to run one of their newly opened fine dining restaurants in Dar Es Salaam.
The successful candidate will have had experience with working in a fine dining environment, creating a quality buffet and canapé menus and be able to professionally manage outdoor catering events.
He/She MUST be a level-headed person, with international hardship location experience and have a flexible approach.
He/she will be involved in the training of a local team to a high standard and will create innovative and creative menus.
Key Responsibilities;
- Be responsible for all production of food items for guests and staff.
- Hold regular staff meetings to keep staff up to date on all aspects of the service operation.
- Develop and create new a la carte, buffet menus as requested by the management.
- Liaise with the management on new trends in food production.
- Ensure that the standard of food production is consistent.
- Develop and apply standard operating procedures.
- Responsible to keep all equipment in good working order.
- Ensure that cleanliness and hygiene in the workplace and the staff are of the highest standard.
- Duties include interviewing, hiring, evaluating, training and disciplining of staff.
- Attend management meetings and convey all relevant information to the sous-chefs and pastry chef.
- Meet guests dining in the restaurant during meal times.
- Ensure that food cost levels are maintained as specified in the budget.
- Liaise with the manager for preparing the proper recipe costing for all menu items.
- Assist when necessary which may mean coming in when not on duty.
- Do weekly and monthly reports as requested.
Qualifications;
- Degree from a reputable institution or relevant discipline.
- Minimum 8 years of chef experience working for 5-star restaurant/hotel.
- International experience.
- A passion for good food.
- Previous management proficiency in high volume retail with P&L accountability.
- Ability to work flexible hours.
- Have excellent English communication skills, both written and spoken.
- Posses professional disposition with excellent interpersonal skills.
- Computer literate.
- Strong organizational and planning skills.
Monthly gross salary: Ksh. 200,000/= plus other benefits (Approx. 2,000 USD)
