Job Title: Assistant Chef
Reporting line: The assistant Chef will report directly to the Head Chef.
Job Location: Based in Uganda.
Compensation: Competitive Compensation.
Job Summary: A senior member of the kitchen team; working closely with and reporting to the Head Chef. To produce quality food to menu specifications in a high turnover unit and for on-site functions & banquets as required.
This post will have full responsibility for all aspects of the kitchen when the Head Chef is absent, maintaining the required high standards. Motivating the kitchen staff to achieve targets and maintain high standards in the Chefs absence.
Creativity and enthusiasm for good food and its presentation is essential. An understanding of budgetary control and elements of catering costs will be essential.
To work with the Hospitality Management Team & Team Leaders and undertake training to deliver projects that will develop food production, management & customer service.
Duties and Responsibilities:
Operational Management
- To work with the kitchen team to produce food for the unit to a high standard on a daily basis.
- To take responsibility for the daily paperwork with regards to ordering.
- To assist the Head Chef with ordering and menu planning.
- To ensure that the temperature records and monitoring is done on a daily basis
- To ensure that areas under your control are cleaned as per the cleaning schedule.
- To ensure that the kitchen stores and other potential areas of loss are secured at all times according to the instructions laid down by the management.
- To cover all duties normally assigned to the Head Chef in their absence.
- To carry out any reasonable requests made by your line manager
- To assist in any of the kitchens, this may require assistance within or outside normal working hours.
Customer Focus/Management
- To report and where possible take action about customers complaints and compliments.
Strategic Management
- To be creative with food presentation.
- To adapt menus where appropriate relating to the sales mix and costing’s
- To undertake project work & training to develop skills in food production, management & enhancing customer service
Financial Management
- To ensure Food Service Assistants use the correct portion size and understand the content of dishes To be able to calculate food costs and manage food costs to achieve budgeted GP’s.
- To be able manage staff resources to achieve budgeted Payroll %.
- To ensure that pre and post costings are completed for all dishes served
Health, safety and licensing
- To take responsibility for the adherence & compliance of all food hygiene legislation.
- Have a full understanding and knowledge of food safety law.
- To report and, where possible, to attend to and take all necessary action, statutory and otherwise, in the event of accident, fire, loss, theft, lost property, damage, unfit food or other irregularities and complete the necessary return and/or report.
Experience, Knowledge and Skills Requirements:
- 3-5 years related working experience from culinary school, 3 of these in a supervisory role in a busy hotel.
- Must be very organized, systematic, patient, motivated, confident and a hard worker.
- Excellent written and oral communication skills, strong leadership skills, analytical and problem solving skills, good customer service skills and multi-tasking skills.
- Should be able to work well under pressure, and with minimal supervision.
- Should also be able to work independently or as part of a large team.
- Candidates should be willing to relocate to Uganda.
- They should also have a valid passport.
- Having a work permit to work in Uganda is an added advantage but not necessary.
