Job Description
Our client is a well-known open-air restaurant within Nairobi, that specializes in a wide variety of barbecued meat, and famous for their game meat.
The restaurant has a night club on the premises with a capacity of over 2,500, as well as an internet cafe, playground, and six bars.
The restaurant which is a popular tourist destination, holds large events, concerts with local and international artists, entertains and dines very high profile celebrities and dignitaries.
To support their current staff needs, we are seeking applications from suitable candidates to fill the following position:
Catering Manager
The Catering Manager is responsible for all catered functions from origination to execution including delegation of responsibilities.
The catering manager works with sales personnel to generate new business and plans menus in accordance with customer expectations and budget.
Responsibilities
Coordination of the smooth execution of all catered events by serving as the principal contact, manager, cost control and collection agent.
Managing the food and beverage provision for functions and events;
Supervising catering and waiting staff at functions.
Planning menus in consultation with chefs and clients.
Organizing, leading and motivating the catering team.
Planning staff shifts and rotas.
Ensuring health and safety regulations are strictly observed.
Budgeting and establishing financial targets and forecasts.
Monitoring the quality of products and service provision.
Keeping financial and administrative records;
Negotiating contracts with customers, assessing their requirements and ensuring they are satisfied with the service delivered (in contract catering);
Maximizing sales and meeting profit and financial expectations.
Overseeing the management of facilities, e.g. checking event bookings and allocation of resources/staff;
Planning new promotions and initiatives, and contributing to business development;
Handling staffing and client/customer requirements
Keeping abreast of trends and developments in the industry, such as menus, trends in consumer tastes and management issues.
Requirements / Competencies
Degree or Diploma in Hotel Management or equivalent in a related field.
Must have 5 years management experience in a recognized hotel or restaurant chain.
Strong interpersonal and communication skills.
Possess strong assessment and decision making skills; outstanding ability to influence and build relationships internally and externally
Ability to identify and resolve problems in a timely and effective manner.
Excellent organization and planning skills
Ability to develop others
An individual with high degree of professionalism and integrity
Knowledge of a foreign language a plus
Ability to develop relevant catering systems, a creative approach to solving problems and passion for service excellence.
Proficiency in Microsoft Office software, Micros and other hospitality IT systems
