Restaurant Manager Vacancy in Mombasa Kenya - Popular Open-Air Restaurant




Our client is a well-known open-air restaurant within Nairobi, that

specializes in a wide variety of barbecued meat, and famous for their

game meat.
 



The restaurant has a night club on the premises

with a capacity of over 2,500, as well as an internet cafe, playground,

and six bars. 



The restaurant which is a popular tourist

destination, holds large events, concerts with local and international

artists, entertains and dines very high profile celebrities and

dignitaries.
 



To support their current staff needs, we are seeking applications from suitable candidates to fill the following position:
 



Restaurant Manager (Mombasa)


The role holder reports to Operations manager and supervises restaurant service staff and is responsible for the efficient running of the main restaurant.


S/he ensures that the main restaurant is operated in conformity with the highest professional standards and to the satisfaction of the patrons.
 



Responsibilities:


  • Supervise the operation of the main kitchen, servery and grill by ensuring fresh preparation of food, kitchen hygiene and cleanliness, regular training of the kitchen brigade to improve their efficiency as well as professional skills.

  • Ensure high quality food products are purchased at the best competitive prices, food stores, including the kitchen cold rooms are orderly and clean, storage of cooked and raw food conforms to the highest standards possible.

  • Supervise the operation of the main restaurant by ensuring that the highest standard of service are maintained, guests are billed and settlement obtained for all services rendered as per the revenue control policy, table reservations are accurately taken and guests warmly received and escorted to their tables

  • Supervise the operation of the bars ensuring that the highest standard of bar service is maintained, cocktails are prepared according to the recipes, beverage costs are maintained as per budget, bar equipment, cutlery crockery and glassware are rationally utilized and well maintained.

  • Ensure bar, restaurant and kitchen staff maintain high level of discipline and are well groomed.

  • Oversee the preparation of the duty roster taking into account the bar, restaurant and kitchen operational requirements.

  • Ensure bar, restaurant and kitchen staff are regularly trained in order to improve their knowledge in respective areas.

  • Ensure food costs are maintained as per budget and orders processed in accordance with revenue control policies,

  • Work with the barmen to create and cost new cocktails, taste all foods to ensure they conform to the set standards and maintain.

  • Analyze the profitability of bar stock items (through pareto analysis) and recommends appropriate action.

  • Conduct regular appraisal of the main restaurant staff

  • Deals with correspondence related to the main restaurant, guest and staff complaints, take corrective measures and suggests required improvements to the unit’s General Manager


Requirements / Competencies:


  • Diploma/Bachelor’s degree from an accredited college or university in Hospitality Management.

  • 3 years management experience in the Hospitality industry.

  • Computer knowledge (Word, excel, Materials Control)

  • Up to date with food and beverages trends and practices

  • Knowledge and experience in a fine dining management and environment

  • Excellent communication and leadership skills.

  • Excellent sales and customer service skills

  • An individual who is passionate about food, beverage and customer service

  • A trend watcher, eye for detail and ability to identify and resolve problems effectively
