Position: Prep Chef

Duties and Responsibilities
- Assist cooks in preparation and service of various foods in assigned work situations including pantry items salads, soups, sauces, and with pre-preparation of ingredients for entrees.
- Assist cooks in the preparation of basic dessert items
- Stock and refill salad bar, and maintain cleanliness of the salad bar.
- Stock the hot buffet unit for meal service
- Remove all food from the serving lines at the end of a meal period
- Store and properly handle raw or prepared foods and non-food supplies.
- Operate dish washing equipment.
- Distribute and store clean pots, dishes and utensils.
- Clean and sanitize production equipment, work surfaces and kitchen according to cleaning schedules and procedures.
- Maintain assigned work station in a safe and sanitary condition.

- Prepares all food items to order, following standard recipes and procedures within specified time limits

- Communicates with Team Members, FOH Team Members and Management throughout the shift regarding status of orders and availability of product.
- Labels all food items for food safety and shelf-life standards.
- Rotates product according to “First In, First Out” to maintain shelf-life standards.

- Ensure that all items are dated on arrival
- Ensure that all perishables are stored according to OB standards
- Clean and filleting of Salmon and other fish for sushi purposes
- The preparation of prawns for sushi purposes
- The cutting and portioning of all garnish and ensuring sufficient garnish and seafood is prepared for the day/shift
- The counting and recording of stock pertaining to the sushi section
- Ensure that all containers are clean and sterilized
- Ensure that there is clean water and a clean, sterilized cloth at all times
- Ensure that the roller mat is in good condition and is covered with clean cling film daily
- Ensure that your knife is sharpened regularly and stored safely
- Ensure that your sushi display looks appetizing and clean
- Ensure that you are wearing the correct uniform and that it is clean and neat
- Check that there are sufficient side plates, bowls, soy sauce bottles and chopsticks
- Ensure that there is enough take away containers for the day
- Follow all correct HACCP procedures.
- Clean and sterilize all knives and cutting boards

- Keep the fridge clean and stocked according to daily levels
- Cutting of lemons
- Ensure that all items in the fridge are covered.
- Assist where needed with the plating of dishes and the actual preparation of dishes.
- Check all products before sending it out
- Preparing correct portions using the right
- Confirm stock levels from Filleting and store rooms.
- Check food quality and product consistency
- Follow weekly and master cleaning schedules for grill line Follow all correct HACCP procedure
