Restaurant Head Cook Job in Karen, Nairobi, Kenya

Duma Works is recruiting a Restaurant Head Cook for one of our clients, an inspiring Restaurant and Grill combining eclectic atmosphere with excellent dining.

Essential Duties and Responsibilities

• Check the quality of raw or cooked food products to ensure that standards are met.


• Monitor sanitation practices to ensure that employees follow standards and regulations.


• Check the quantity and quality of received products.


• Order or requisition food or other supplies needed to ensure efficient operation.


• Supervise or coordinate activities of cooks or workers engaged in food preparation.


• Inspect supplies, equipment, or work areas to ensure conformance to established standards.


• Determine how food should be presented and create decorative food displays.


• Instruct cooks or other workers in the preparation, cooking, garnishing, or presentation of food.


• Estimate amounts and costs of required supplies, such as food and ingredients.


• Plan, direct, or supervise the food preparation or cooking activities of multiple kitchens or restaurants in an establishment such as a restaurant chain, hospital, or hotel.


• Collaborate with other personnel to plan and develop recipes or menus, taking into account such factors as seasonal availability of ingredients or the likely number of customers.


• Analyze recipes to assign prices to menu items, based on food, labor, and overhead costs.


• Prepare and cook foods of all types, either on a regular basis and for special guests or functions.


• Determine production schedules and staff requirements necessary to ensure timely delivery of services.


• Recruit staff, such as cooks and other kitchen workers.


• Meet with customers to discuss menus for special occasions, such as weddings, parties, or banquets.


• Coordinate planning, budgeting, or purchasing for all the food operations within establishments such as clubs, hotels, or restaurant chains.


• Demonstrate new cooking techniques or equipment to staff.


• Meet with sales representatives to negotiate prices or order supplies.


• Arrange for equipment purchases or repairs.

Experience Requirements

• Any combination of education, training, and experience, which demonstrates the knowledge and skill to perform the duties and responsibilities as described


• Successful experience as a cook preparing food in reputable establishments


• Leadership experience is desirable


• Knowledge of techniques and methods of quantity food preparation and storage; ability to prepare creative menu plans


• Knowledge of nutritional values in food preparation;

1. Skill to estimate food quantities required for menus


2. Skill to plan the preparation of meals for serving at specified meal times


3. Skill to prepare large quantity meals with a minimum of waste


4. Skill to maintain a budget and monitor expenditures;

• Knowledge of and ability to train others in safety practices related to food preparation and use of commercial kitchen utensils and equipment


• Skill to monitor inventory levels and requisition supplies to ensure adequate supply of food stuffs;


• Skill to add, subtract, multiply and divide; knowledge of standard liquid and dry measurements;


• Skill in using a computer to prepare reports, track data,


• Ability to stand for long periods of time;


• Ability to lift and carry boxes and supplies;


• Knowledge of basic record keeping
